A Respected Tasmanian Craft – The Still and Gin (Bar) by March Studio

Celebrating the history of distillation in Tasmania, The Still and Gin (Bar) provide enriching environments for the drinking of whisky and gin. Crafted by March Studio, the two bars form the public home of Lark Distilling Co, the first carbon-neutral distillery in Australia.

In both concept and execution, The Still and Gin (Bar) reflect the strong influence of their surrounds. Located in Hobart, the space is comprised of two bars, each occupying a level. Both interior spaces relate to an external climate often reminiscent of Scotland, where Arctic winds drive visitors to seek warmth inside. Whilst offering a place of respite, The Still and Gin (Bar) also express the quality of local distilling culture, which harnesses the cold climate to create luxurious whisky. In particular, the bars champion the quality whisky produced by Lark Distilling Co, whose reputation for positive environmental action further solidifies the connection to the natural landscape. Attached to the heritage-listed Mercury building, the bars carry an architectural significance aligning with the structure’s historic and industrial character, presented in harmony with a refined contemporary lens.

Whilst offering a place of respite, The Still and Gin (Bar) also express the quality of local distilling culture, which harnesses the cold climate to create luxurious whisky.

Downstairs is dedicated to The Still, paying homage to the unique qualities of whiskey and the meticulous distillation process. The Still features a display of Lark’s earliest bottles and Bill Lark’s original Still, which accompanies a wall of barrels used during distillation, as well as three retractable tasting barrels that can be lowered onto a tasting table upon request. An interactive showcase provides a striking visual of every distiller in Tasmania. Evoking the flavour of peated whisky, March Studio creates an interior defined by smoky tones with black, vegan-leather booths combined with charred timber wall cladding and an augmented Barasol lighting display.

Upstairs in Gin (Bar), botanical blends of Tasmanian gin are celebrated alongside Lark’s own Forty Spotted. Mirroring the bright and colourful variety of the beverages on offer – as well as the spirit of experimentation embodied by the Lark team – the gin bar is a light-filled space resembling a nest, with timber walls and ceilings creating a soothing envelopment.

Advancing the work of the building’s previous tenants, March Studio establishes a setting that both honours the architectural context and responds to its challenges. The Still and Gin (Bar) emerge as immersive environments with softened acoustics, material warmth and interior brightness; inviting spaces that proudly reflect a respected Tasmanian craft.
