Gilson is an all day bar and bistro on the Botanical Gardens precinct. Open from 6am everyday, it was designed by Projects of Imagination and was inspired by the traditional Parisian establishment and a time gone by. Working closely with artisan joiners, steel and glazing fabricators and bespoke furniture makers, Duobuilt managed and executed the demolition to transformation of this existing popular cafe to a place whose intention is to build and brace the notion of institution, furnishing an immediate sense of tradition and feeling of ‘always was and always will be’ with a modern fresh vernacular.

Crafted items feature throughout, from the pink cement floor, zinc bar top and joinery, hard plastered wall treatment and original light fittings.
