Sitting at the base of what has become an icon of its own in Surry Hills, Paramount House Hotel, Poly invites passers-by to sit and savour the rich history of the building.
The original industrial warehouse contains reminders of its past, reinterpreted by Anthony Gill Architects as a combined dining and bar space. Circulating around the open flame grille at the centre, guests become participants in the making and preparation process amongst shared and open table settings. The casual and welcoming eatery is founded on a material honesty, with raw brick, polished concrete and exposed services leaving nothing hidden.
