Cera Stribley’s 2019 redevelopment of St Hubert’s Winery has seen two humble sheds reimagined into Hubert Estate – a sophisticated destination unlike anything else in the Yarra region that boasts a family-style restaurant, Indigenous art gallery, event space and – of course – the cellar door.

Following the topography’s natural contours that open onto stunning vistas, Hubert Estate’s sculptural ‘eyelid’ peers out from the undulating landscape like a watchful guardian. At its entryway, situated on the rear side of the grassy mound, a large copper door punctuates two high concrete walls. This dramatic entrance leads into a space that feels enduring in its minimalism, with a simple material palette of terrazzo, leather and raw-edged natural timber. The warm textures create the perfect atmosphere for an afternoon of wine-tasting that allows the surrounding vineyards to shine.

Winding pathways mimic the sense of discovery that a forager might feel, while the rustic, moody restaurant and lighter, more refined function centre offer cosy gathering spaces for guests.

Drawing inspiration from the fable of Saint Hubertus, the winery’s namesake and patron saint of the hunt, Cera Stribley worked with stakeholders to weave a seamless narrative of the site’s past, present and future throughout the entire visitor experience. Winding pathways mimic the sense of discovery that a forager might feel, while the rustic, moody restaurant and lighter, more refined function centre offer cosy gathering spaces for guests. The second phase of the development will soon see a hotel and wellness centre rounding out this journey with sanctuaries of rest and retreat.
