An immersive dining experience nestled in the laneways of Melbourne’s CBD, Ishikuza’s interior elevates the restaurant’s Japanese influence and bespoke, intricate menu. Interior designers Russell & George create a deeply considered dining setting, eloquently capturing the precision that defines the Japanese haute cuisine known as kaiseki.

Designed to immerse and engage, the 16-seat subterranean restaurant offers an all-compassing dining experience. Drawing inspiration from kaiseki, which is regarded as an artform practised by only the most experienced culinary masters, the restaurant features a thoughtfully crafted and ever-evolving menu that pays homage to authentic flavours derived from fresh, seasonal produce and an appreciation of taste, texture and precision.

Interiors reference the kaiseki tradition, which follows a sense of theatre as a series of courses are presented to the diner. With a curated selection of tableware and an intimate dining setting to complement the intricate food presentation, the space evokes the same precision, balance and bespoke sensibility as the restaurant’s menu.

Russell & George imbues this traditional approach with a distinctive contemporary element. This is achieved through a robust, moody interior that embodies a quietude befitting its exacting food philosophy – low lighting, stone and timber are used throughout, complemented by a bold and dark colour palette. There is also a distinct oriental influence; Japanese-inspired artwork adorns the walls, floral lighting patterns feature as a statement piece and furnishings are kept minimal and sleek.

Daring and alluring, Russell & George brings the art of authentic Kaiseki cuisine to life with a holistic approach to interior design that is daring while remaining warm and inviting.

The refined interiors are further developed through considered additions and expert craftsmanship. Tableware is custom-made by Kyoto ceramicists Shigeo and Yotaro Takemura of Dainichi Gama Studio, while glassware and cutlery once again epitomise quality and precision. Head chef Shin Kato expresses, “this space reflects the precision and detail that defines this cuisine and my culinary journey – it’s an inspiring atmosphere to work in every day.”
